Allam (Ginger) Pachadi (Pickle)

Ginger!!Ginger!!Ginger – reminds me of my dear father, who loves his ginger and would like it to be used in as many dishes!!!  This recipe tastes great when prepared with the ginger that is tender as it is juicy, fleshy and less fibrous with a very mild taste.
Ginger is one of the earliest Oriental spices known in Europe.
Fresh ginger is generally used for cooking purposes and Dried ginger is widely used in the preparation of medicines.
It is highly regarded as an appetiser and a digestive agent in addition to its taste and flavour
A drink of mashed ginger with caramelised sugar, cumin seeds and water helps to eliminate coughs, colds, asthma and stomach aliments.
Tea prepared with mashed ginger and cardamom powder is a home remedy for indigestion, nausea, colds and flu!!

This is one of the recipes handed down to me by my dear mum !!!

Ingredients

1 Cup Chopped Ginger (tender)
1 Inch Tamarind
Half a lime sized Jaggery
1-2 Tbs Salt

For Seasoning

3 Tbs Oil
2 Tsp Mustard Seeds
1 Tsp Fenugreek Seeds
1 Tsp Urad Dal
4-5 Red Chillies
½ inch Asafoetida OR
¼ Tsp Asafoetida Powder

Allam Pachadi

Preparation

Heat one tablespoon of oil in the pan
Add the mustard seeds, urad dal, fenugreek seeds , red chillies and asafoetida
Fry for a couple of minutes until the dal turns golden brown
Add the chopped fresh ginger and fry for a further 3-4 minutes on a low flame

Cool and grind the above with the tamarind, jaggery and salt into a soft mixture.
Add the remainder of the oil in the pan, and saute the ground mix for a couple of minutes only
The pachadi tends to harden quickly if left unattended or sauted for more than a minute as jaggery has been added. 

This awesome allam pachadi is ready to be served

Note: Tastes delicious when mixed with plain rice and eaten or as an accompaniment to snacks like dosas and uthappams!!!  My preference is to use the tender ginger as it is less fibrous and hence can be easily ground into a soft paste!

    Hi Shobha,

    Tried your Allam Pachadi, and it was really tasty.
    Used Rapadura Sugar as I did nor have jaggery, but it did not change the taste.

      Hi Raji – Thanks for your input – I love ginger so this is my favourite – Yes any sweetened taste adds an extra flavour and taste to this dish……tender ginger with less fibre comes out really well
