Almond Burfi

You can be true to your “heart” if you eat a handful of almonds everyday!!!! and If possible consume with the skin as it rich in anti oxidant flavonoids 

It is great for the heart as it lowers bad cholesterol and reduces the risk of heart disease

Many special sweet and savoury treats are made out of the this world’d greatest and healthiest nut!!
One such sweet treat is the burfi made out of this wondrous nut!!!

Ingredients- for approximately 20 pieces

1 Cup Almonds (fully soaked in hot water)
1 Cup Ghee *
2 Cups Sugar
1 Cup Water
2-3 drops Almond Essence
2 drops Food Colouring (Optional)

(*Ghee is butter melted in a pan until golden brown – unsalted butter is generally used in the preparation of sweets )

Preparation

Soak the raw almonds in boiling hot water for about 10 minutes. Peel it and grind it into an almost fine mixture and keep aside.
Heat the cup of water in a pan. Add the sugar and keep stirring till the syrup thickens to the right consistency.
To check the right consistency of the syrup, add a few drops of the sugar syrup into a bowl of water. The syrup is ready when it can be lifted and curled gently with the forefinger and thumb.

Add the ground mixture and keep stirring till it solidifies. Add the food colouring and essence.
Pour the ghee and keep stirring till the mixture starts to separate from the pan.
Tilt the mixture into an already greased plate and cut into squares or diamond shapes after 10 minutes.

Note: Pistachio Burfi can be prepared in a similar manner using pistachio nuts instead of almonds. Shelled pistachios are used and soaking or peeling is not necessary.
Pistachio essence can be used. Food colouring is optional.

  1. Shobha, one cup ghee is more than 150 gms of melted unsalted butter. This is a bit confusing.
