Almond Kheer

You can be true to your “heart” if you eat a handful of almonds everyday!!!! and If possible consume with the skin as it rich in anti oxidant flavonoids

Ingredients to serve 10

¼ Cup Almonds
¼ Cup Luke Warm Water
6 Cups Milk
2 Cups Sugar
Few Drops Almond Essence
1 Tsp Cardamom Powder
Few strands of Saffron (to add colour to the dish!!) 

Optional to use
1 ladle Fresh Cream OR
1 ladle Condensed Milk

Preparation

Soak the nuts for 10 minutes is hot water (so it is easy to peel the skin)
Peel the skin, add water and grind into a soft mixture
Set aside

Place the milk on a medium flame, stirring it every 2 minutes till it comes to the boil.
Reduce the flame still further and add the soft ground mixture
Stir it for about 5-6  minutes.
Add the sugar, fresh cream or condensed milk, saffron and the essence
Keep stirring and let it boil for about 5 minutes on a very low flame

The Kheer is ready to be served!!
You can serve it hot, warm or chilled
