Appam (Sweet)

 Do you have over-riped bananas in the fruit bowl and you do not have the heart to throw it in the bin? 
Well…..one of the best treats to prepare with the over riped bananas is Sweet Appam. 
This is a delicious sweet treat which is made of flour and jaggery or brown sugar.  My preference is to use bananas in this recipe for the texture, taste and the healthy aspect to the dish…..
The batter when mixed can be prepared immediately. 
Using a non stick mould available in most Indian Grocery stores, is ideal for the preparation of this dish for best results!!!!! 
Appam is generally made in a metal dish (a non stick one preferably) which has special moulds of about six or  seven which is placed directly on the heat. 
Kids love it too as it almost tastes like a Banana Muffin!!!

Ingredients to make around 30-35

1 Cup Wholemeal Flour
2 Tbs Rice Flour
1 Cup Powdered Jaggery
2 Medium Sized Mashed Ripe Bananas
1 Tsp. Cardamom Powder
2 Tbs. Finely Chopped Cashew nuts
½ Cup Water (add extra if necessary)

For Shallow Frying
¼ Cup Oil

Preparation

Mix all the ingredients adding the water little by little to form a thick batter.

Place the appam mould on the stove.  When it is moderately hot, add quarter of a teaspoon of oil in each mould.
Scoop out a tablespoon of  the batter and pour it in each mould.
Add half a teaspoon of oil around each appam and let it cook till it turns golden brown at the bottom.
Gently lift the appam from the mould working your way around the appam and turn it over and let it cook till it is golden brown and done.  This generally should take 10-12 minutes for  each lot (approximately 7) to be done at one time!!

Repeat this process with all the other appams and fill the moulds again in a similar manner.
The appams are ready to be served when the appam is golden brown all over.

Note:  This dish can be prepared in a small deep pan as well – but is not only time consuming as you have to make one at a time but is also impractical from getting the appams evenly done!! 
My preference is to use a non stick mould as it would not consume much oil and is quick, practical and easy to prepare!

      Yes Wheat flour – that you make rotis and puris with (Atta or in tamil – Godhumai)
