Aval Kesari


This quick, delicious, exotic sweet treat is just amazing and is one of my favourite sweet dish and takes minutes to prepare!!!

The  main ingredients are  Aval (as it is known in the South of  India  or Poha in the North and Flat Beaten Rice in English) and sugar.  Spices can be added to suit the individuals’ palate!!

2 Cups Aval (Poha)
3 Cups Sugar
1 ½ Cups Hot Water
2 Ladles Ghee (melted unsalted butter)
2 Tbs Chopped Cashew nuts
Few Strands Saffrom
A spec of Edible Camphor (optional)
½ Tsp Cardamom Powder
A pinch Orange Food Colouring

Preparation

Soak the aval in a large deep based pan for 2-3 minutes in hot water
Place the pan over the stove, stir in the sugar and bring it to the boil on a medium flame
Sprinkle the saffron and the food colouring
Let it cook gently stirring the mixture every 30 seconds till it solidifies (which would appoximately take 10 minutes)

In the meantime, heat a small pan with 2 tablespoons of ghee
Fry the cashew nuts till it turns golden brown and keep aside

Pour the remainder of the ghee to the solidified mixture and gently simmer the mixture for 3-4 minutes
Remove from the stove. 
Sprinkle the cardamom powder, spec of camphor (which is generally broken between the thumb and the forefinger) on to the dish

Decorate it with the fried cashew nuts sprinkled on the top
It is ready to be served!!

Note: This dish can be prepared in advance and heated in the microwave and served!!!
