Aval Upma

This is a very simple, quick, tasty recipe, which takes minutes to prepare!! This dish can be had for breakfast or tea and great to serve especially at get togethers on festive occasions as it can be prepared in bulk and takes less time!! as the great advantage of Aval is that it cooks in minutes. 

The flat beaten rice, which is used  in this recipe is called “Aval” in the South of India and “Poha” in the Northern Parts of India.

Ingredients to serve 6 people

2 Cups Aval (Poha)
¼-½ Cup Hot Water (just enough to soak the aval)
2 Tsp. Oil
1 Tsp. Mustard Seeds
1 Tsp. Urad Dal
1 Tsp Channa Dal
Few Chopped Cashew Nuts
2 Red Chillies
¼ Tsp Asafoetida Powder
2 Tbs Freshly Grated Coconut
Few sprigs Curry leaves
1-2 Tsp. Salt

Preparation

Soak the aval in the hot water for a minute
Heat the oil in a pan
Add the mustard seeds
When the mustard seeds crackle, add the urad dal, cashew nuts, red chillies, asafoetida and curry leaves.
When the urad dal and cashew nuts turn golden brown, add the soaked aval
Fry it for about 2-3 minutes
Add the grated coconut and mix it thoroughly

The Aval Upma is ready to be served – Optional to garnish with freshly cracked pepper

Note: Just enough water should be used to soak the aval.  Too much water will make the upma soggy and unappetising.  A pinch or turmeric powder may be added.
The juice of a lime may also be added in the end to change the flavour and taste of the dish to suit the individuals’ palate!!  Rava (semolina) Upma and Vegetable Upma are prepared in a similar manner with varations ofcourse!
