Capsicum Rice

Ingredients to serve 6 people

2 Cups Basmati or Long Grain Rice
2 ½ Cups Water
1 Red Capsicum
1 Green Capsicum
1 Golden Capsicum
1 Large onion
1 Pod finely chopped garlic
1 Tbs Oil
1-2 Tsp Salt
A small bunch of fresh coriander leaves (chopped fine)

Cook the Rice separately in a pressure cooker
There are also other Methods of cooking Rice

Slice all the vegetables lengthwise
Heat oil in a pan, add the sliced onions and sauté for a couple of minutes
Add the varieties of the sliced capsicums and fry for a few minutes (do not overcook the vegetables)
Fold through the cooked rice and sprinkle the salt (preferably with a wooden laddle)
Garnish the rice with freshly chopped coriander leaves and it is ready to be served

Note: You can use any capsicum variety that is available – My preference is to use the different varieties of capsicums to add colour and taste to the dish.
Serve this dish with Yoghurt Onion Raita or Onion and Tomato Raita with Yoghurt!!
