Cauliflower (Gobi) Rice

It is winter time in Sydney and Cauliflower is  one of the vegetables, which is so tempting to purchase as it is available in abundance at the fresh produce market or any local supermarket!!
I am sure some or most of you will feel the same as I do when it comes to cauliflower – you would like to try out something different.
Why don’t you try out this rice dish?  This rice dish 
tastes great with any variety of Dal or with any spicy sabji as this rice has very mild spices!!

Ingredients

2 Cups Basmati or Long Grain Rice
2 ½ Cups Water
2 Cups Cauliflower Florets
1 Large onion
1 Pod finely chopped garlic
1 Tbs Oil
A pinch of Turmeric
1 Tsp Cumin Seeds
2 Green Chillies
2 Cloves
1 Small Cinnamon Sick
1-2 Tsp Salt
A small bunch of fresh coriander leaves (chopped fine)

Cauliflower (Gobi) Rice

Preparation

Cook the Rice separately in an electric rice cooker or  pressure cooker
You may  cook the rice directly in a pan too if you wish! –  See Methods of Cooking Rice

Microwave the small florets for 4-5 minutes with a tablespoon of water
Heat oil in a pan, add the turmeric,cumin seeds, cloves, cinnamon,green chillies and sliced onions
Sauté for a couple of minutes
Add the cooked cauliflower florets and fry for a few minutes (do not overcook the vegetables)
Fold through the cooked rice and sprinkle the salt (preferably with a wooden laddle)

Garnish the rice with freshly chopped coriander leaves and it is ready to be served 

Note: A teaspoon of garamasala may be sprinkled on the vegetable before the rice is folded in!
