Channa Dal Sundal

Channa Dal is another legume which has rich in protein.  It has a very low Glycemic index and hence good for diabetics.
It is also known as Bengalgram and is used in Indian cooking.   The flour which is ground Channa Dal is used to prepare a number of snacks, both sweet and savouries and is very popular in all parts ofIndia.

Roasted Channa Dal is used the preparation of some dishes!!

Ingredients to serve 6-8 people

1 Cup Raw Channa Dal
2 Cups Water (to soak the channa dal)
2 Tsp Oil
1 Tsp Mustard Seeds
1-2 Green Chillies (chopped)
A pinch of Asafoetida
2 Tsp Freshly Grated or Shredded Coconut
Few sprigs Curry leaves
1 Tsp Salt

Preparation

Soak the Channa dal for a couple of hours
Drain the water and pressure cook the peanuts for 2-3 whistles
(ensure that the channa dal is not over cooked or mushy)

Heat the oil in a pan. Add the mustard seeds
When the mustard seeds crackle, sprinkle the asafoetida powder and add the green chillies and curry leaves.
Stir through the cooked channa dal and sauté for about 2-3 minutes on a medium flame
Fold the freshly grated coconut and fry for about a minute or so

The sundal is ready to be served
