Coconut Powder

Coconut is a tropical fruit and is widely used by people living in South East Asian countries.
The coconut is broken into half and the white kernel portion of the coconut is generally grated or shredded and is used for the preparation of dishes

Grated Coconut is also readily available in the local produce markets.
Grated coconut can also be stored it in the freezer, which lasts for a month or so and can be used from time to time.
Dessicated or Shredded Coconut available at the super markets can also be used but my preference is to use freshly grated cocount.
Various parts of the coconut is used for different purposes.  Coconut oil, cream and milk are used in cooking too although it contains saturated fats!
Best eaten in moderation!!!  Dishes prepared using Coconuts generally have a very low shelf life and also tastes great when consumed fresh. 

Coconut water is the new low fat healthy drink which is very popular amongst the sportsmen too – It is pure, natural with no artificial flavours or additives!!! 

This dish is quick and easy prepared with grated or shredded coconut!!

INGREDIENTS

3-4 Cups Freshly Grated Coconut
½ Cup Channa Dal or Yellow Split Peas
6-7 Red Chillies
½ inch piece Asafoetida or
¼ Tsp. Asafoetida Powder
1 Tbs. Oil
1-2 Tsp. Salt

Preparation

Dry roast the coconut for 2-3 minutes on a medium flame.
The channa dal should be roasted separately in an empty pan till it turns golden brown.

Cool and grind the above into a slightly coarse powder
