Coriander Rice

Rice dishes are ideal for picnics and parties as they are less messy and easier to handle especially when travelling from one place to another.  This is a dish which is easy and quick to prepare as the coriander leaf thogayal, chutney or pachadi can be prepared in advance and mixed with fresh hot rice!

Ingredients for 6 people

1 ½ Cups Rice
3 Cups Water
½ Cup Coriander Leaf Thogayal or Chutney

For Seasoning

2 Tbs. Oil
1 Tsp. Mustard Seeds
2 Tsp. Urad Dal
¼ Tsp. Asafoetida Powder

 Preparation

Wash the rice thoroughly and add the water
Cook the rice until  it  is done.

Add the mustard seeds in the oil
When the mustard seeds crackle add the urad dal and fry till the urad dal turns golden brown.
Add the seasoning to the rice and add the coriander leaf thogayal or chutney little by littleand salt and mix it thoroughly

It is ready to be served
Some people prefer to use basmati rice – My preference is to use a mix of both raw and basmati rice!!
