Lime Pickle (Instant)

Pickles are prepared in various ways to suit the individuals’ families and their tastebuds!
One is awe-struck by the way in which our elders rattle off recipes from the top of their heads – one such recipe is from my mother-in-law’s kitchen – She has been serving authentic, purely south indian, exotic dishes over five decades and still is!!!!and ofcourse her dishes are thoroughly enjoyed by her children and grand children!
I am very proud to say that these dishes are a part of my kitchen too!!

This instant lime pickle is one of  her recipes and I would like to name it as:

“Mrs Jaya Rajagopalan’s Instant Lime Pickle”

Ingredients

2 Limes (chopped into small pieces)
2 Green Chillies (sliced)
1 Inch Piece Ginger (grated or finely chopped)
¼ Tsp Asafoetida Powder
¼ Tsp Turmeric Powder
1 Tbs Oil
1 Tsp Mustard Seeds

Preparation

Heat oil in a pan and the mustard seeds
When it crackles, add the chopped chillies, ginger, asafoetida and turmeric powder
Add the chopped lime pieces and sauté for 3-4 minutes

The lime pickle is ready to be served

Note: Yellow lemons or Grapefruit can be prepared in a similar manner.
If the limes are too sour or bitter, a teaspoon of sugar may be added to the pickle and mixed thoroughly.
This instant fresh pickle cannot be bottled and stored away for months as they stay fresh only up to a week if stored in a cool place.

    Sounds very simple and easy…..will definitely try this one. Can we substitute this with raw mangoes for an instant raw mango pickle experience as well?
    Also happy to see the amazon ads in your website. One day I hope there is a Shobha range of cookware as well. Good luck

      Thanks Nalini for your support and encouragement! The great thing about subsituting with raw mango is that you do not even have to saute it. You can season cut raw mango pieces in a little oil with mustard seeds, turmeric powder and red chilli powder!!
