 I, like many others was personally  very fortunate to have been associated with one of the most extremely talented, simple, modest, caring and considerate ladies, who after battling an illness, left us, today a year ago….
She was Gowri, my husband’s dear cousin who was like a sister, a mentor, a philospher and a guide to most people who knew her closely – and I am  glad that we openly expressed our praises, appreciation and gratitude to her while she was with us….

This recipe was hand written by her (see above) and given to me, as she knew that this particular lime pickle was one of my husband’s favourites!!!
I would like to dedicate this to Gowri and call it – Gowri’s Lime Pickle

Most family members and friends who knew her, will vouch  for this tasty pickle as well as for her  talents across various fields, from cooking and baking to sowing and to the field of medicine, nutrition and science!!

This simple but exotic pickle can be prepared in minutes and is fat-free!!!

9 Cups Lime Pieces
2 Tbs Turmeric Powder
2 Cups Salt
1 Cup Sugar
1 Cup Red Chilli Powder
1 Tbs Fenugreek Seeds
½ Tsp Asafoetida Powder

Preparation

Dry roast the fenugreek seeds in a low flame till it splutters
Add the asafoetida powder and grind it to a fine powder and keep aside

Slice the limes into small pieces and place it in a bottle
Add the turmeric powder, salt, sugar, red chilli powder and the asafoetida fenugreek powder

Shake the bottle thoroughly and store it in a cool dry place
It is ready to be served after a few weeks

Note:  The pickle as most pickles can be eaten with yoghurt and rice or as accompaniment to any dish according to individuals’ taste buds!!  If stored in a cool dry place, it lasts for months!
You may also use one inch piece of asafoetida instead of the asafoetida powder – in that case, heat a tablespoon of oil and fry it asafoetida for a few seconds or until it is fully fried.  Grind it with the roasted fenugreek seeds into a fine powder.  This can be bottled and used for the preparation of  other pickles and chutneys too!!!!

      Yes you are absolutely right – It has been on my mind for the last few weeks and am glad that I was able to make the pickle a few days ago and post it on her 1st anniversary!!
