Milk Poli

Milk Poli or Paal Poli as it is popularly called is commonly prepared on festive occasions.  This dish can be prepared in two stages.
The polis (made out of semolina and plain flour) can be made the previous day and stored in an air tight container.
The milk with all the spices as described in the recipe may be prepared the following day.
It is preferable for milk with all the spices be cooled before you place the fried polis in it!! 

A quick and easy sweet festive treat to prepare, it is our family favourite!!

Ingredients to make 10 polis

1 Cup Fine Semolina
¼ Cup Plain Flour
¼ Cup Warm Water
6 Cups Milk
3 Cups Sugar
Few Strands Saffron
1 Tsp. Cardamom Powder
2 Tbs. Chopped Pistachio Nuts

For Deep Frying

2 Cups Oil

Preparation

Mix the semolina and the plain flour by sprinkling the water little by little into a very soft but firm dough.
Bring the milk to the boil, reduce the flame and add the sugar and stir it for about 10 minutes
Add the saffron and cardamom powder and keep aside.

Divide the dough into medium sized balls.
Roll each ball to 6 centimetres in diameter by patting the dough now and then on some dry rice flour so that it does not stick.
Roll each one (poli)  individually and spread it out separately on a tray

Heat the oil in a pan and keep it on a medium flame
Deep fry the poli in the oil sliding the polis one by one
When it puffs up, gently turn it on the other side until it turns slightly golden brown

Place it gently in the milk syrup and let it soak for a few minutes
After 4 or 5 polis have been made, take out the already soaked polis and move it to the bottom making room for the rest of the fried polis.
The polis taste good when they have been soaked in the milk syrup for at least an hour or so.

Decorate it with a few chopped pistachio or thinly sliced almonds
When it is ready to be served gently remove the polis one by one and serve it warm or cold

Note: If the dough gets a bit dry and hard, sprinkle some warm water and mix it thoroughly before you roll it out
