Mixed Vegetable Pickle

Scrumptious, Delicious, Awesome and Mouth Watering is the way to describe this very authentic tasting mixed vegetable pickle!!The aromatic fresh spice powders used in this recipe enhances the flavour, texture and taste of the pickle. The combination of vegetables used in this pickle makes it colourful, very appetising, pleasing and tempting to the eye!! If stored in a cool dry place or in the fridge, the pickle would last for a week to 10 days, but i doubt there’ll be any left after that long!

Well, this recipe, which I am very proud to proclaim is my dear hubby’s own recipe!!!

A family favourite not conformed to just our household but appreciated by close family and friends who make a beeline for this pickle!!  My hubby is not only a critic of my food and as you can see contributes to the kitchen with a few of his exotic dishes as well!!!

Ingredients

1 cup of cauliflower florets (chopped into small pieces – about 3 cm)
1 cup fresh grated carrot
1 small (5 inch) tender grated ginger
1 medium green mango (cut into small pieces about 1 cm in length)
5 green chillies seeded and sliced along the length
1 Banana Chilli (Long pale green)
Juice of 1 lime or lemon
2-3 Tbs salt
3 Tbs chilli powder
1 Tbs turmeric powder
5 Tbs mustard seeds (roast and powder)
2 table spoon fenugreek seeds (roast and powder)

For Seasoning

1/2 cup oil
1 Tbs Mustard seeds

Preparation

Dry roast the 5 tablespoons of mustard seeds and the 2 tablespoons of fenugreek seeds separately for a couple of minutes
Grind it into a fine powder and keep aside
Mix all the chopped vegetables, salt, chilli powder, turmeric powder, lemon juice in a jar and keep aside
Add the powdered ingredients to the above and allow it to marinate for a day

Heat the oil in a pan
Add the table spoon of mustard seeds, when it crackles, switch off the stove and allow it to cool for 2-3 minutes
Add the above seasoning to the marinated vegetables

The pickle is ready to be served.

Note: This outstanding  pickle tastes great with rotis, parathas and as an accompaniment to any main dish. More vegetables can be used to suit the individual and families’ tastebuds!!!
