Peanuts Sundal

Ingredients to serve 6-8 people

1 Cup Raw Peanuts
2 Cups Water (to soak the peanuts)
2 Tsp Oil
1 Tsp Mustard Seeds
A pinch of Asafoetida
2 Tsp Freshly Grated or Shredded Coconut
Few sprigs Curry leaves
1 Tsp Salt

Preparation

Soak the peanuts for a couple of hours
Drain the water and pressure cook the peanuts for 4-5 whistles

Heat the oil in a pan. Add the mustard seeds
When the mustard seeds crackle, sprinkle the asafoetida powder and add the  curry leaves.
Stir through the cooked peanuts and sauté for about 2-3 minutes on a medium flame
Fold the freshly grated coconut and fry for about a minute or so

The sundal is ready to be served
