Quick Corn Pulao

Scrumptious quick and easy recipe which can be prepared in minutes as this dish can be easily multi-tasked!!
All you need is a cup of corn kernels, onions
and a dash of spices……

Corn has been rated the world’s healthiest food!  Fresh sweet corn or frozen corn kernels is considered a nutrient-rich food which is a good source of mineral manganese.
Since it has a very high fibre content, it is rich in Vitamin B1, B5 and folic acid.
  It has powerful anti-oxidant properties –
it can be eaten cooked or grilled – the dry corn is used in the preparation of popcorn which is a favourite snack!!

Ingredients – To serve 4

1 Cup Basmati or Long Grain Rice
1 ½ Cups Water
1 Cup of  Frozen or Fresh Corn Kernels (available in the local super markets)
(thaw the kernels if it is frozen with a cup of hot water for a few minutes)
1 Tsp Cumin seeds
¼ Tsp Turmeric
1 Onion chopped lengthwise
1 Pod finely chopped garlic (Optional)
2  green chilli (sliced lengthwise)
1 Tsp Garam Masala

2 Tbs Oil

Preparation

Cook the rice in an electric rice cooker or pressure cook the rice with a couple of whistles
In the meantime microwave the corn kernels on high for 6-7 minutes and keep aside.

Heat the oil in a pan
Add the turmeric and cumin seeds
The chopped onions are stirred through and sauted until soft
Add the chopped garlic, green chilli and fry for a couple of minutes
Stir in the cooked kernels to the above mix
Add salt to taste
Fold through this mix into the cooked rice (Add extra salt only if needed)

Garnish it with finely chopped coriander leaves.

Note:  For colour texture and taste you may add cooked diced carrots and  peas as well with the kernels !
