Cabbage Curry


Ingredients to serve 6 people

5  Cups Finely chopped Cabbage
 ¼ Cup Water
2 Tsp. Oil
1 Tsp. Mustard Seeds
1 Tsp. Urad Dal
1 Red Chilli
A Pinch Turmeric Powder
2 Tbs Freshly Grated Coconut
Few sprigs Curry leaves
1-2 Tsp. Salt

Preparation of the Curry

Heat the oil in a pan.
Add the mustard seeds and when the mustard seeds crackle, add the urad dal, red chilli, pinch of turmeric powder and curry leaves.
When the urad dal turns brown, add the chopped cabbage.
Cover with a lid and cook for approximately 6-7 minutes
Take the lid off, add the freshly grated coconut and fry for about a couple of minutes.

The curry is now ready to be served.

Note: Cooking Cabbage directly in a pan retains the flavour and texture than cooking in a microwave oven
Although  five cups of raw cabbage is being cooked, it generally reduces to about four cups of cooked cabbage
