Gulab Jamun

This delicious tasty sweet treat is very popular, and is served as a dessert in parties at home as well as in restaurants.  This recipe is very simple to follow and takes hardly 30-40 minutes to prepare!!

Ofcourse half the quantity of the ingredients can be used to make enough for the family, which will take lesser time!!

Ingredients to make 30 Gulab Jamuns

2 Cups Skim or Full Cream Milk Powder
1 Cup Fine Semolina
½ Cup Self Raising Flour  OR
½ Cup Plain Flour with a Pinch of Bicarbonate
200 ml Fresh Cream (enough to make a firm but soft dough)
½ Tsp Rose essence

For the Syrup

4 Cups Sugar
5 Cups Water
1 Tsp. Rose essence
1 Tsp Cardamom powder
Few Strands of Saffron

For deep frying

2 Cups Oil

Preparation of the Syrup

Bring the water to the boil and add the sugar.
Stir on medium heat for about 7-8  minutes and keep the sugar syrup aside.
The syrup is ready when the sugar totally dissolves in the water and reduces to about 5-6 cups
Add the saffron, rose essence and cardamom powder to the syrup.

Preparation of the Jamun

Mix all the ingredients and add the fresh cream little by little to make a soft but firm dough.
Take very small portions of the dough and gently roll the dough between the palms of both hands (making sure that it is soft and smooth all over)  into double the size of a cherry.
Heat the oil in a large deep based pan
Reduce the heat to a very low flame.
Deep fry the balls in batches of 7-8, turning the balls around gently till it turns golden brown.
Add it into the syrup immediately and the jamuns are ready to be served.
You will notice that the jamuns become double the size!! (as in the picture above)

Note:
Use only Fresh Cream – Do not use thickened cream, because the jamuns will harden.
My preference is to use Skim Milk Powder.
Ensure that the correct amounts of the ingredients are used to prepare this dish – a little less or more of the flour will make it too hard or too soft!!

The Jamuns should take nearly 8-10 minutes to turn golden brown.
Jamuns, which turn golden brown immediately or even lesser than 6 minutes will not be cooked on the inside.

Serving Suggestions: Gulab Jamuns can be served with a dollop of vanilla ice cream, which complements very well!
