How to make Paneer at home

To make 2 cups of Paneer

3-4 litres Milk
ΒΌ Cup Lime Juice

Bring the milk to the boil
Reduce the flame and stir it adding the lime juice little
by little till it curdles and starts forming small lumps.
Take the pan away from the stove and pour the milk on a muslin cloth through a sieve
Tie the cloth to the water tap in the kitchen sink overnight and let the water drain completely.

The Paneer is now ready to be used.

Note: If you need paneer cubes, the process of making the paneer is the same but once you pour it in the muslin cloth, you need to place a 250 gram weight on it to compress the paneer.
This would allow you to cut it into cubes the following day.
