Rose Kulfi

This is one of the quickest dessert recipes to prepare and is an absolute treat to both young and old.
This dessert is not only pleasing to the eye it tastes delicious as well!!
Planning is necessary only to the extent that it has to set for altleast 5 hours in the freezer!
One recipe that never fails and a great dessert to have in summer or in winter!!

Ingredients

300 ml Fresh Cream
350 ml (*Evaporated Milk (available in local super markets)
(If you do not have evaporated milk, boil 3 cups of milk till it reduces to a cup, cool it and use it in the mix)

375 ml (**Condensed Milk (available in local super markets)
1 Tsp Cardamom Powder
A Tsp of Rose Syrup Concentrate or
1-2 Tsp Rose Milk Syrup (available in Asian or Indian Grocery Stores)
Few Drops of Rose Essence (Optional)

Preparation

Pour in the fresh cream, evaporated milk and condensed milk in a large rectangular dish
Add the few drops of the Rose syrup concentrate or the Rose Milk Syrup
Mix thoroughly with a laddle
You will notice that the entire mixture turns into a  lovely pink and beautiful texture
Sprinkle the cardamom powder and stir through the mixture
Pour into individual kulfi cones to the brim if you have cones handy and place it standing in the freezer to set for 5-6 hours
If you do not have cones,  place the dish in the freezer so that it can be cut into squares or any shape as you desire when it is served!!

For Garnishing (Optional)

5-6 Pistachio Nuts (slivered or grated for dressing to be sprinkled at the top)

Note: The Kulfi has to be taken out of the freezer for a couple of minutes or so before serving
It may be served as a whole or cut into pieces and serves more than 20 people and it melts in about 10 minutes- so make sure you take it out of the freezer a few minutes before you serve!

Pistachio Kulfi and Mango Kulfi are prepared  in a similar manner with the substitution of mango pulp and ground pistachio nuts instead of the rose syrup!

*Evaporated Milk is milk, which is boiled and reduced to half the quantity available in ready to use cans
**Condensed Milk is Evaporated Milk with the sweetness in it

  1. I made mango sorbet this sumemr using the same mango pulp coconut milk proportion but did not add any evaporated milk. And though it tasted good it was nowhere near as creamy as yours. This looks yummy. Will try it with evaporated milk, which I am not sure what is or where to find.BTW, where do you live Sonia where Scorching sumemr has already started in your part of the world? On our side the weather can’t decide if it is spring, winter or rainy season. Jaya, it so happened that I used evaporated milk, as I was not sure how using coconut milk all by itself would taste. Evaporated milk is available in the baking aisle along with condensed milk and they are available in cans. The consistency is that of regular milk and is not sweet. Another great use of it is to use it in gravies as substitute for cream, milk etc. Hope this helps.

      Thank you for browsing through my website! Yes the rose syrup is like Rooh Afza – it is thick concentrate that you can make rose milk with by adding a couple of teaspoons to a cup of milk!
