Khajur (Dates) Roll

This treat can be served as a healthy snack as well as a dessert!!

Dates are a great source of vitamins and minerals. Rich in
Iron, Potassium, Sodium and Vitamins B1, B2, B5 and Vitamin C, a date or two can be consumed every day for overall goodness nutrition and reduces cholesterol!

The nuts used in this recipe add the crunchy flavour as well as the wholesome goodness of almonds, cashews and pistachios!

3 Cups Khajur (Black Dates pitted and spilt into half)
1/2 Cup Chopped Cashew Nuts
1/2 Cup Chopped Pistachio Nuts
1/2 Cup Chopped Almonds
1/4 Cup Edible Gum
2 Tsp Ghee

Preparation

Heat the ghee in a large pan. Fry the edible gum for a minute or two (it should puff up like rice puffs). Remove from pan, crush the gum into a powder and set aside.
In the remainder of the ghee, fry the nuts till it is slightly roasted and drain on to a plate.
Stir in the khajur (split dates) and mix it thoroughly on a medium flame till it becomes soft, which generally takes 2-3 minutes. Add the fried nuts and the crushed gum to the date mix.

Divide the date nut mix into two or three cylinderical portions ( as pictured below). Bring the mix together between your two hands compressing it tightly.

The Khajur Nut mix is done.

Chop it into circular discs and the Khajur roll is ready to be served!
