Kuzhi Paniyaram (Savoury)

Another amazing, delicious, sumptous treat with the left over idli batter!!!!!???
The batter is prepared to make Idlis on the first day, plain or masala dosa the next day, Oothappams or Kuzhi Paniyarams or Appams on the following days.

This simple treat is called Kuzhi Paniyaram or Appam, which is made in a special appam mould.  Generally seven appams can be made in one go and therefore a great entree to serve at big gatherings.

Ingredients to make 25-30

2 Cups of left over Idli Batter OR

1 Cup Par Boiled Rice or Raw Rice
¼ Cup Whole Urad Dal
6 Cups Water (to soak)
2-3 Tsp. Salt

Preparation of the Batter

Wash the Rice and Urad Dal thoroughly and soak it in the water
Soak the above for 5-6 hours
Drain the water leaving quarter of a cup of water and grind it into a soft batter.
Add the salt and cover it with a lid and allow it to ferment during the day for 6-7 hours or overnight.
The batter will rise and is ready for the preparation of the dish

Ingredients to mix in the batter

1 Medium Sized Onion (finely chopped)
1-2 Green Chillies (finely chopped)
Few Finely chopped coriander leaves
½ Tsp Cumin Seeds (Optional)

Add the above ingredients to the fermented batter and mix thoroughly.
A special appam mould is used to help shallow fry this dish.
The mould is now available with a non-stick surface, which is easy to scoop out the appams when done and is less messier.
Grease the mould with a drop of oil in each mould
(optional if you are using a non stick mould)
Scoop a tablespoon of the batter and pour just enough into each mould

Fry it till it turns golden brown on the bottom
Gently flip each one gently on to the other side and scoop the it out till it is fully cooked on both sides
