Potato Leek Soup

Scrumptious, Delicious, Awesome and Mouth Watering is the way to describe this very authentic tasting Potato Leek Soup!!! The combination of vegetables used in this soup makes it very appetising, pleasing and tempting to the eye!!

Well, this recipe, which I am very proud to proclaim is my dear hubby’s recipe and he takes  pride as well,  in preparing and dishing this out to family and friends!!!

It is said that there are nearly 4000 varieties of potatoes in various colours, shapes and sizes. Unfortunately we do not eat potatoes raw although they contain a high amount of vitamin C most of it which is lost due to cooking the potato.
High in potassium, Vitamin B6 and is good for the heart – Kids love dishes made out of potatoes and ofcourse, this soup definitely is a kids’ favourite too!!!

Leeks belong to the onion and garlic family and taste great particularly in soups and salads.  It is rich in fibre and Vitamins A and C.  The white portion of the leek is generally used in cooking and the green portion which is harder in texture is discarded.  Some people use raw leeks  in salads, leeks when fried is a bit crunchier in taste and  when slightly sauted and cooked , it tastes awesome as in this exotic Potato and Leek soup!!!

Ingredients to serve 10 people

3 Medium Sized Potatoes
2 Leeks
1 Large Onion
4-5 Cups Water
2 Tbs Butter
3 Cups Milk
Few Chives (very finely chopped)

Preparation

Peel and chop the potatoes and onions fine and set aside separately
Chop the white portion of the leeks fine and set aside separately
Heat a large deep based pan and add the butter
When the butter melts sauté the chopped onions till it has a glassy look and texture
Saute the leeks for a couple of minutes
Add the finely chopped potatoes with 3 cups of water, milk and cover with a lid
Let it cook for 10-12 minutes or till the potatoes are soft to touch

Allow the above mix to cool
Blend it to a semi solid mixture.
Pour it through a sieve and strain it to a smooth texture
Add the remainder of the water and bring it to the boil

The soup is ready to be served

Note: Serve the soup in individual bowls, garnishing with the chives and freshly ground pepper. Additional water can be added to arrive at the semi liquid soup texture if required!!!
