Aloo Dum

This recipe tastes awesome and is a favourite especially amongst kids as Potato is the main ingredient.
It takes under 20 minutes to prepare this succulent, delicious and popular dish!!

It is said that there are nearly 4000 varieties of potatoes in various colours, shapes and sizes. Unfortunately we do not eat potatoes raw although they contain a high amount of vitamin C most of it which is lost due to cooking the potato. High in potassium, Vitamin B6 and is good for the heart – Kids love dishes made out of potatoes and ofcourse – ofcourse potato chips are much-loved by all!

Ingredients to serve 6-8 people

10 Medium Sized Potatoes (peeled and chopped in cubes) or
20 Small Potatoes (Peeled)
1 Large Onion
2 Cloves Peeled Garlic
1 Inch Piece Fresh Ginger (finely grated or chopped)
2 Tomatoes (Finely Chopped)
100 gms Tomato Paste
1/4 Cup Fresh Plain Yoghurt
1/4 Cup of Water
Fresh and finely chopped coriander leaves

3 Tbs Oil
1 Tsp Cumin Seeds
1 Pinch of Turmeric Powder
1-2 Tsp Garamasala Powder
1-2 Tsp Red Chilli Powder
2 Tsp Coriander Powder
1-2 Tsp Salt

Preparation

Microwave the potatoes on high for 7-8 minutes and keep aside
Heat the oil in the pan
Add the cumin seeds and turmeric powder
The chopped onion, ginger, garlic should be added and sauteed for about 2-3 minutes till the onion is soft.
Add the chopped tomatoes, tomato paste and fry for a further 3-4 minutes on a medium flame
The garamasala, red chilli powder, coriander powder, yoghurt and salt should be added
Fry for a couple of minutes and add the water
Add the cooked potatoes to the above and stir through the sabji
Cook the sabji on a low flame for 4-5 minutes (without a lid)
Garnish it with chopped fresh coriander leaves


Note: Tastes great with chappatis and plain cooked basmati rice!!  If you are allergic to dairy – yoghurt need not be added and it still tastes great!
My preference is to microwave the potatoes as the texture, colour of the potato is maintained as well as cooks faster!!!
You may wish to cook the peeled and chopped potatoes directly on the stove with a cup of water for about 20 minutes or until cooked …
