Aloo Gobi

Did you know that Cauliflower when steamed or cooked in the microwave better preserves anti-cancerous compounds???
The florets chopped of the same size cook evenly easily too (in minutes)
 If undisturbed when cooking it retains the shape, texture and tastes great when it is not mushy. 
Cauliflower is very high in Vitamin C and is rich in iron as well
It has almost similar characteristics to Broccoli and belongs to the same family!

Ingredients to serve 6-8 people

Vegetables Required

1-2 Cups Gobi (cauliflower)  florets
2 Medium Sized Potatoes (peeled and chopped into large cubes)

For the Gravy

3 Tbs Oil
1 Tsp Cumin Seeds
1 Large Onion (cut in quarters)
3 Tomatoes (cut in quarters)
50-100 gms Tomato Paste
1-2 Green Chillies
2 Pods Peeled Garlic
1 Inch Piece Fresh Ginger (chopped)
1 Tsp Garamasala Powder
1 Tsp Red Chilli Powder
1 Pinch of Turmeric Powder
1-2 Tsp Salt
Few Freshly Chopped Coriander Leaves
4 Tbs Fresh Cream

Aloo Gobi

Preparation

Cook the cauliflower florets and the chopped potatoes with a tablespoon of water separately in the microwave oven
and keep aside
The cauliflower may be cooked for 3-4 minutes and the pototoes for 6-7 minutes

Heat one tablespoon of oil in the pan
Add the cumin seeds and turmeric powder
The chopped onion, ginger and garlic can be added immediately and fried till the onion is glassy and soft.
Add the chopped tomatoes, tomato paste  and fry for a further  3-4 minutes 
Once the onion and tomato mixture is sauted and soft, add the garamasala, red chilli powder and salt
When it is cooled, add the fresh cream and grind it into a soft mixture.

Heat the remainder of the two tablespoons of oil and saute the ground mixture for a few minutes
Add the  cooked gobi (cauliflower) and potatoes and simmer for a couple of minutes
Add ¼ of a cup of water and cook the sabji on a low flame for 4-5 minutes
Garnish it with chopped fresh coriander leaves

Note:  Mattar  Paneer (Fresh Peas and Paneer) Aloo Gobi Mattar (Potato, Cauliflower and Peas)  and several other combinations of vegetables and paneer can be prepared in a similar manner.
