Broccoli and Capsicum Curry

Do you want to add some colour to the “spread” on the dining table??– This colourful, quick and tasty mixed vegetable curry recipe has a combination of broccoli florets, red and green capsicum, prepared with onions for that extra colour, flavour and taste!!

Capsicums come in red, green or golden and they are also called chilli peppers. They have very high levels of Vitamin C and Vitamin A.
Broccoli is a vegetable that belongs to the cabbage family. It is high in Vitamin C, very nutritious and has anti-cancerous properties. In order to preserve the nutrients and the benefits of this vegetable, it is recommended to steam or stir fry the vegetable rather than cooking it.

Ingredients to serve 6 people

1 Cup Brocolli Florets
1 Large Green Capsicum (chopped into small lengthwise pieces)
1 Large Red Capsicum (chopped into small lengthwise pieces)
1 Small Finely Sliced Onion
2 -3 Tbs. Oil
½ Tsp. Turmeric Powder
1 Tsp. Mustard Seeds
1 Tsp. Urad Dal
Few Sprigs Curry Leaves
1-2 Tsp. Sambhar Powder
1-2 Tsp. Salt

Broccoli and Capsicum Curry

Preparation

Microwave the chopped red and green capsicums for about 5 minutes

Heat the oil in a pan and add the mustard seeds.
When the mustard seeds crackle, add the urad dal, curry leaves and the turmeric powder
When the urad dal turns brown, add the finely sliced onion and the florets of broccoli
Fry for a few minutes until the broccoli is a little soft in tecture
Add the cooked capsicum and saute for a further 3-4 minutes
Sprinkle the salt and add the sambhar powder and fry for a further 2-3 minutes

The curry is ready to be served – tastes delicious when mixed with plain rice and eaten or as an accompaniment!!

Note: You may choose to cook the capsicums directly in a pan too!
These vegetables in particular do not taste good if it is overcooked – even a “half-cooked cold brocolli or capsicum” tastes better than  overcooked !!
