This snack is an awesome combination of raw carrots and onions with a dash of spice and ofcourse flour to bind it!!!!
Carrots are rich in fibre and antioxidants – They can be eaten raw as in salads, boiled and cooked as in soups and various desserts as well!!
This Carrot Onion Bhaji can be served as an entrée or a snack during tea time –
This entrée is the most popular and loved entrée in our family.
We would never go without ordering this entrée at the Indian Restaurant which is stone’s throw from our place that we frequent quite regularly!!
Tastes great when you deep fry it as once in a way indulgence in deep fried dishes is explicable!!
To make 20-22 (medium sized)
1 Cup Finely grated carrots
1 Cup Finely chopped onions
1 Tsp Mild Red Chilli Powder
¾ Tsp Garam Masala Powder
¼ Tsp Turmeric
½ Tsp Ajwain (optional)
Few Finely Chopped Coriander leaves
1 Tsp Salt
¾ – 1 Cup Besan Flour (enough to bring the mix together)
3 Cups Oil
Preparation
Heat the oil in a deep based pan
Mix all the ingredients – (Do not add any water when you mix the dough unless necessary)
Divide equally into 20-22 portions. Flatten it and set aside
When the oil is hot, reduce to medium heat and slide in the individual portions 5-7 at a time based on the depth of the pan
Remove and drain on a paper towel when both sides are cooked
The Carrot Onion Bhaji is ready to be served. Tastes great with tomato or chilli sauce or mint chutney
