Cauliflower Leek Soup

Delectable, Delightful, Delicious and ideal winter warmer as the veggie used in this recipe is generally available in abundance during the winter months!!!!
The combination of the exotic cauliflower and leek used in this soup makes it very appetising, pleasing and tempting to the eye!!

Did you know that Cauliflower when steamed or cooked in the microwave better preserves anti-cancerous compounds???
The florets chopped of the same size cook evenly and quick too (in minutes)
If undisturbed when cooking it retains the shape, texture and tastes great when it is not mushy.
Cauliflower is very high in Vitamin C and is rich in iron as well!!

Leeks belong to the onion and garlic family and taste great particularly in soups and salads.  It is rich in fibre and Vitamins A and C.  The white portion of the leek is generally used in cooking and the green portion which is harder in texture is discarded.  Some people use raw leeks  in salads, leeks when fried is a bit crunchier in taste and  when slightly sauted and cooked , it tastes awesome as in this exotic soup!!!

Ingredients to serve 10 people

2 cups Cauliflower florets
2 Leeks
2 Cups Water
2 Tbs Butter
2 Cups Milk
Few Chives (very finely chopped)

Preparation

Chop the white portion of the leeks fine
Roast the cauliflower florets lightly in a pan in a
teaspoon Of butter for a few minutes and remove from pan
(You may set aside a few roasted florets for garnishing – optional!)

Add the remainder of the butter
When the butter melts sauté the leeks for a couple of minutes
Toss in the roasted florets and fold the leeks and the florets together
Add the milk and one cup of water, cover with a lid and
let it cook for 10-12 minutes or till the florets are soft to touch

Allow the above mix to cool
Blend it to a semi solid mixture.
Pour it through a sieve and strain it to a smooth texture
Add the remainder of the water and bring it to the boil

The soup is ready to be served

Note: Serve the soup in individual bowls, garnishing with the chives and freshly ground pepper.
Additional water can be added to arrive at the semi liquid soup texture if required!!!
