Cauliflower Curry

Cauliflower is  one of the vegetables, which is so tempting to purchase at the fresh produce market or any local supermarket and there is plenty available especially in winter.
I am sure some or most of you will feel the same as I do when it comes to cauliflower or cabbage.
We love the look of it; so we buy it but they may be staring at us (for many days) when we open the fridge, eagerly awaiting to be cooked.
Well, this very simple , tasty cauliflower dish will alleviate that and make you grab that fresh cauliflower from the fridge and try out this quick recipe.
I hold  this dish very close to my heart as it is my husband’s own favourite recipe!!!

Ingredients to serve 6 people

4 Cups Cauliflower Florets
2 Tbs Water
2 Tbs Oil
1 Tsp Cumin Seeds
2 Green Chillies (slit lengthwise)
¼ Tsp Turmeric Powder
Few Coriander Leaves (fresh and finely chopped)
1-2 Tsp Salt

Preparation of the Cauliflower Curry

Heat oil in a pan
Add the turmeric, cumin seeds, sliced green chillies and the florets with the two tablespoons of water
Saute it for a minute and cover with the lid on a low flame for about 4 minutes.
Add the salt, gently stir it through and toss the pan at intervals of two minutes and leave it cooking for a further 5 minutes on a low flame or until soft and tender.
Garnish it with fresh coriander leaves
The cauliflower dish is now ready to be served

Note: This curry can be eaten with rotis (bread) or as an accompaniment with any rice dish
