Coconut Chutney


This chutney is quick, simple and very easy to prepare. 
A great accompaniment for a lot of snacks – this dish can be prepared in minutes!! Dessicated or Shredded Coconut available in local supermarkets may also be used – but traditionally, freshly grated coconut is used.

Ingredients to serve 6 people

1 Cup Freshly Grated Coconut
4 Tbs *Roasted Channa Dal
1-2 Green Chilli
¼ Cup Water
1 Tsp. Salt

For Seasoning

1 Tsp. Oil
½ Tsp. Mustard Seeds
1 Tsp. Urad Dal

Preparation

Grind the freshly grated coconut, roasted channa dal, green chillies, water, salt into a soft mixture.
Heat the oil in a pan and add the mustard seeds.
When the mustard seeds crackle, add the urad dal and fry it tilk the dal turns golden brown
Spoon it out of the pan, garnish the chutney and serve with plain or rava dosa, idlis and other snacks.

Note: A few freshly chopped coriander leaves and one tablespoon of fresh yoghurt may also be used to grind with the ingredients desribed above to make the chutney.

*The roasted channa dal, which is readily available in the Indian grocery stores is light yellow in colour. 
Channa dal may also be substituted – if roasted channa dal is not readily available.  It should be lightly roasted till it darkens slightly.
