Green Apple Thokku (Pickle)

Granny Smith apples  have a lovely crunchy flesh and are very juicy!! They are high in anti-oxidants and the nutrition is preserved if eaten with the skin.
These apples are low in calories, very high in dietary fibre and potassium!!  They are available all year around and particularly in autumn!

 Thokku or pickle is generally prepared without adding water and this exotic delicacy lasts for weeks if stored in a cool dry place.  Great on hot toasts, as an accompaniment to most snacks and delicious with plain rice!!!

Ingredients

4 Green Apples ( Peeled and roughly chopped or grated)
5 Tbs Oil
1 Tsp Mustard Seeds
2 Tsp Fenugreek Seeds
½ inch piece Asafoetida or
1 Tsp. Asafoetida Powder
5-6 Dried Red Chillies
¼ Tsp. Turmeric Powder
1-2 Tsp. Salt

Preparation

Steam or boil the chopped pieces of apple in a pan with a little water OR
Pressure cook the chopped pieces of apple for one whistle or 10 minutes
Cool and keep aside

Heat 2 tablespoons of the oil in a pan
Add the mustard seeds
When the mustard seeds crackle, add the fenugreek seeds, red chillies, asafoetida and turmeric powder
Grind the above into a fine powder and set aside
(Double or Triple the quantity of the spice powder can be prepared and bottled for future use!!!)
Blend the chopped cooked pieces of apple with the spice powder until it is a soft mixture

Heat the remainder of the oil, add the above pickle mix
Saute for a couple of minutes on a low flame

Cool and bottle it in an air tight container

Note: The process of grinding the spice powder separately helps maintain the texture of the pickle !!!
