Inspired by this combo of dal and pumpkin at a family gathering, I added my own variation to the dish!!
One of the quick and delicious dal recipes, which has a twist to it by adding roasted pumpkin with onions and tomatoes
Ideal to eat with rotis or puris and garlic is optional!!
It is highly nutritious and a tasty dish and takes under 10 minutes to prepare once the dal is cooked!!
Perfect if you are running late coming home from work as this dal needs no soaking or advance preparation.
Ingredients to serve 6 people
1 Cup Moong Dal (whole green)
2 Cups water
1 Cup of chopped Yellow Pumpkin
2 Tbs Oil
1 Large Onion (finely chopped)
1 Large Tomato
2 Small Green Chillies (sliced lengthwise)
1 Tsp Cumin Seeds
¼ Tsp Turmeric Powder
1- 2 Tsp Sambhar Powder
1 inch piece fresh ginger (chopped fine)
¼ Tsp Asafoetida Powder
1-2 Tsp Salt
Preparation of the Dal
Pressure cook the cup of moong dal with the two cups of water (same as cooking toor dal)
In the meantime, chop the pumpkin into small squares and keep aside
Heat the oil in a pan
Add the cumin seeds, green chillies, chopped onion, ginger and fry until the onion turns golden brown.
Stir through the chopped pumpkin and saute for 3-4 minutes
Add the cooked moong dal, sambhar powder and the asafoetida powder and fry the mixture for 3-4 minutes.
Add some more water if necessary to make it into a semi liquid mixture.
Garnish with the freshly chopped coriander leaves
The Dal is ready to be served. Tastes great with rotis.
