Onion Chutney or Thoghayal or Pachadi

Do you have only onions in the pantry and a few veggies floating by in the fridge?  Tired to think what to cook?

Prepare this quick easy simple awesome tasting chutney to eat with a curry and rasam!
Does not even take the time to prepare rice!!

Ingredients to serve 6 people

2 Large Onions (chopped into quarters)
1 inch Tamarind or
A Tsp of tamarind paste
2 Tbs Oil
½ Tsp Mustard Seeds
½ Tsp Urad Dal
2 Red Chillies
A pinch Asafoetida OR ¼ Tsp Asafoetida Powder (optional)
1-2 Tsp Salt

Preparation

Heat the oil in the pan
Add mustard seeds, urad dal, asafoetida (optional) and red chillies
Fry for a couple of minutes until the dal turns golden brown.
Add the chopped onions and fry for 4-5 minutes.
Cool and grind the above into a soft mixture with the tamarind

The Chutney or pachadi or thoghayal is ready to be served
 Note:  Various combinations of vegetables can be used with or without the onion – adding a different colour and taste to the chutneys
