Potato Red Capsicum Paneer Sabji

This dish is a colourful combo of the most popular veggie potato, red capsicum or red pepper for colour and flavour!!
Ever popular Paneer or Cheese to enhance the taste and flavour of the dish!

 It is said that there are nearly 4000 varieties of potatoes in various colours, shapes and sizes. Unfortunately we do not eat potatoes raw although they contain a high amount of vitamin C most of it which is lost due to cooking the potato. High in potassium, Vitamin B6 and is good for the heart –Capsicum otherwise known as Peppers grow in variety of colours – green, gold or yellow and red.   Capsicums are low in unsaturated fat, cholesterol and sodium.  Good source of Vitamins A, B6, C and K it is mostly available throughout the year!!
My preference is to use the Red Capsicum for the wonderful colour and flavour!!

Ingredients to serve 6 people

3 cups of Chopped Potatoes (Chopped in cubes)
1 Medium Sized Red Capsicum (roughly chopped)
1 Cup of chopped Paneer cubes

3 Tbs Oil
1 Medium Sized Onion (finely chopped)
1 Pinch of Turmeric Powder
1 Small Tomato (finely chopped)
50-100 gms Tomato Paste
1-2 Green Chillies (finely chopped)
2 Cloves Peeled Garlic (finely chopped)
1 Inch Piece Fresh Ginger (finely chopped or grated )
1-2 Tsp Garamasala Powder
1 Tsp Red Chilli Powder
1-2 Tsp Salt

Potato Red Capsicum Paneer Sabji

Preparation

Microwave the chopped potatoes for 6-7 minutes and the Capsicum separately for about 3-4 minutes on high
Keep aside
In the meantime heat the oil in the pan and add the turmeric powder
The chopped onion, ginger, green chillies and garlic can be added immediately and fried till the onion is glassy and soft
Stir in the chopped tomatoes, tomato paste and sauté for a couple of minutes
Add the cooked veggies
Cook on a low flame for 4-5 minutes
Add the garam masala, red chilli powder and salt

Garnish it with chopped fresh coriander leaves
Note:.This dish tastes delicious with Puris, Chapatis, Naans and Plain Rice.
My preference is to cook the veggies for 5-7  minutes in the microwave so that the dish is ready in minutes and there is no need to micro-manage!!!
