Pumpkin Red and Green Capsicum Sabji

Wondering about another dish that you can prepare with the nutritious pumpkin?

Pumpkins are available in white, yellow and orange in colour.  The yellow pumpkin used in this recipe generally has a slightly sweet taste –

Pumpkins can be toasted, grilled, baked or cooked to prepare various exotic dishes.
It is a powerful anti oxidant, full of nutrients, Vitamin A, C , Zinc, Potassium and the yellow colour is synonomous with the richness of beta carotene present in it!!

Capsicum otherwise known as Peppers grow in variety of colours – green, gold or yellow and red.  Capsicums are low in unsaturated fat, cholesterol and sodium.
Good source of Vitamins A, B6, C and K it is mostly available throughout the year!!
My preference is to use the Red  Capsicum with a combination of  green or the yellow capsicum for this recipe!

This is an awesome combination of colour, flavour, texture and taste of the wonderful combo of stir fried veggies!!

Ingredients to serve 6 people

3 cups of Chopped Yellow Pumpkin
1 Medium Sized Red Capsicum
1 Medium Sized Green Capsicum
3 Tbs Oil
1 Medium Sized Onion
1 Pinch of Turmeric Powder
1 Large Tomato
50-100 gms Tomato Paste
1-2 Green Chillies (finely chopped)
2 Cloves Peeled Garlic (finely chopped)
1 Inch Piece Fresh Ginger (finely chopped or grated )
1-2 Tsp Garamasala Powder
1 Tsp Red Chilli Powder
1-2 Tsp Salt

Preparation

Microwave the chopped pumpkin and the Capsicums separately for about 5 minutes each and keep aside
(make sure that the pumpkins do not get mushy or if you wish you may stir fry the veggies)

In the meantime heat the oil in the pan and add the turmeric powder
The chopped onion, ginger, green chillies and garlic can be added immediately and fried till the onion is glassy and soft
Stir in the chopped tomatoes, tomato paste and sauté for a couple of minutes
Add the  the cooked pumpkin and capsicums
Cook on a low flame for 4-5 minutes
Add the garam masala,  red chilli powder and salt

Garnish it with chopped fresh coriander leaves

Note:.This dish tastes delicious with Puris, Chapatis, Naans and Plain Rice.
My preference is to cook the veggies for 5 minutes in the microwave so that the dish is ready in minutes and there is no need to micro-manage!!!
