Thayir or Dahi (Yoghurt) Vada

Scrumptious, Delicious and mouth watering summer snack!!!
As it can be prepared in advance, great to dish out for parties and get togethers as one dish can be got out of the way!
This dish can be prepared the previous day, left in the fridge to soak and served the following day!!! 

20 Urad Dal Vadas (Check this link to prepare the Urad Dal Vada)
2 Cups  Water (in a large bowl to dip the fried vadas for 20 seconds )

Ingredients to make the Spicy Yoghurt mix

2 Cups Sweet Yoghurt
¼ Cup of Warm Water
2 Tbs Sour Cream
½ Cup Freshly Grated Coconut
3-4  Finely Chopped Green Chillies
1 inch Finely Chopped Ginger
½ Tsp Asafoetida
1 Tsp Salt

Preparation

In a blender, blend the yoghurt, sour cream with the green chillies, ginger, coconut, salt and set aside
Once the vadas are deep fried, drop the hot vadas in the water for 30 seconds
Remove it immediately and soak the vadas in the yoghurt mixture

(My preference is to soak it overnight or 7-8 hours – remove each vada gently an hour before you serve on a rectangular tray and dress the individual vadas) 

Optional – For the top dressing

2 Tsp  Oil (for seasoning)
1 Tsp   Mustard Seeds
A pinch of Chutney or Red Chilli Powder in the centre of the vada as a decoration for each vada
A teaspoon of some boondhi mixture
Few finely chopped Coriander leaves

Half a teaspoon of finely grated carrot can also be sprinkled in the centre as a decoration

Heat the oil in a small pan
Add the mustard seeds.
When it crackles, pour it on to the soaked vadas
Dress each vada with the pinch of chutney powder or red chilli powder and coriander leaf in the centre


Note:  If the yoghurt mixture turns solid because of the soaked vadas, add some milk and loosen it up before you arrange it on a tray!!
