Asparagus Soup

Do you want to make a delicious soup and make this veggie a  fun one for the kids to include in their meals as it is a brain booster!!!!!?
This is a quick and easy soup to dish out with this awesome veggie,  Asparagus !!

Scrumptious, Delicious, Awesome and Mouth Watering is the way to describe this very authentic tasting Asparagus Soup!!!
Few ingredients and less laborious too!!

A wondrous vegetable that helps to fight cancer – Low in Saturated Fat, and very low in Cholesterol and Sodium.
It is a great source of Calcium, Magnesium, Zinc and Selenium and a very good source of Dietary Fibre.
Packed with all the goodness of Vitamins A, C, E and K.  It is Proteinous in addition with an abundance of Iron, Phosphorus, Potassium, Copper and Manganese.

Ingredients to serve 10 people

2 Bunches of Asparagus (about 12)
1 Small Onion (finely chopped)
4-5 Cups Water
1 Tbs Butter
2 Tbs Oil
¼ Cup Milk



Chop the Asparagus into one inch pieces and set aside
Heat a large deep based pan
add the butter and oil
When the butter melts sauté the chopped onions till it has a glassy look and texture
Sauté the chopped asparagus pieces for a few minutes
Pour in the quarter cup of milk and the water
Let it cook on medium flame for 6-7 minutes

Allow the above mix to cool
Blend it to a semi solid mixture.
Pour it through a sieve and strain it to a smooth texture
Add enough water to make it into a semi liquid consistency and bring it to the boil

The soup is ready to be served hot or cold

Note: Serve the soup in individual bowls with freshly ground pepper.
More water can be added to arrive at the semi liquid soup texture if required!!!
