Navratan Korma

Navratan or Navaratna means Nav (Nine) Ratan (gems) which refers to the vegetables, fruits and nuts that are generally used in this recipe. Different combination of vegetables can be used to prepare this korma to suit to the individuals’taste.
This awesome Navratan Korma tastes delicious with chapatis, naans and plain rice.
Small Pine apple pieces can also be added to make the korma more colourful and tastier!!

Ingredients to serve 6 people

15-20  Beans
2 Medium Sized Carrots
Handful of fresh or frozen peas
2 Medium Sized Potatoes (peeled)
15 small cube pieces of Paneer*
Handful of cauliflower florets
¼ Cup of Dried Sultanas
1 Medium Sized Onion
2 Tomatoes
50-100 gms Tomato Paste
1-2 Green Chillies (finely chopped)
2 Cloves Peeled Garlic (finely chopped)
1 Inch Piece Fresh Ginger (finely chopped or grated )
1 Tsp Garamasala Powder
1 Tsp Red Chilli Powder
1 Pinch of Turmeric Powder
1-2 Tsp Salt
Few Freshly Chopped Coriander Leaves
2 Tbs Fresh Cream
3 Tbs Oil

Chop the beans, carrots and peeled potatoes into medium sized cubes.
Cook the above vegetables in the microwave separately for 7-8 minutes
Microwave the peas for 4-5 minutes
Chop the onions and tomotoes really fine and keep aside
Heat two tablespoons of oil in the pan and add the turmeric powder
The chopped onion, ginger and garlic can be added immediately and fried till the onion is glassy and soft
Stir in the chopped tomatoes, tomato paste and sauté for a couple of minutes
Add the cooked vegetables, paneer, garamasala, red chilli powder, fresh cream and salt
Add quarter cup of water, cover with a lid and cook on a low flame for 4-5 minutes

Garnish it with chopped fresh coriander leaves and the dried sultanas

Note: In addition to using any combination of vegetables and fruits, nuts may also be used.
