Ingredients to prepare 6 cups of Kheer
¼ Cup Pistachios
¼ Cup Water
1 litre Milk
1 ½ Cups Sugar
Few Drops Pistachio Essence
Preparation of the Kheer
Soak the nuts for 10 minutes is hot water. Grind into a soft mixture and keep aside.
Place the milk on a medium flame, stirring it every 2 minutes till it comes to the boil.
Reduce the flame still further and add the soft ground mixture and stir it for about 5 minutes.
Add the sugar. Stir it for another 6-7 minutes. Add the essence.
Mix it thoroughly and let it boil on a very slow flame for about 5-6 minutes
The Kheer is now ready to be served warm or chilled.
Note: Raw Almonds can be prepared in a similar manner. Soak the raw almonds in boiling water for about 10 minutes. Peel the almonds (it is easy to peel the almonds as it has been soaked in boiling water) Add a few drops of almond essence and it is called Almond Kheer.
Four tablespoons of Sweet Condensed milk can be substituted for ½ a cup of sugar. Therefore one cup of sugar can be used instead of the one and half cups of sugar
