Pistachio Kulfi

This is one of the quickest dessert recipes to prepare and is an absolute treat to both young and old.  Planning is necessary only to the extent that it has to set for altleast 5 hours in the freezer!
One recipe that never fails and a great dessert to have in summer or in winter!!

Ingredients

Handful Raw Pistachio Nuts
½ Cup Water
300 ml Fresh Cream
350 ml (*Evaporated Milk (available in local super markets)
400 ml (**Condensed Milk (available in local super markets)
1 Tsp Cardamom Powder
Few Drops of Pistachio Essence (preferably with green colour)

Preparation

Grind the pistachio nuts with water into a soft mixture
Combine all the above ingredients with the pistachio mix
Fill the cones almost to the brim with the kulfi
Place it standing in the freezer to set for 5-6 hours

If you do not have Kulfi cones, mix all the ingredients in a square or rectangular tray or dish and place it in the freezer overnight or for 5-6 hours and cut it into small squares or as you desire!

For Garnishing (Optional)
5-6 Pistachio Nuts (slivered or grated for dressing to be sprinkled at the top)

Note: The Kulfi has to be taken out of the freezer- hold it under hot tap water for a minute or so before serving
It may be served a whole or cut into pieces and serves more than 20 people and it melts in about 10 minutes- so make sure you take it out of the freezer a few minutes before you serve!

Mango Kulfi is prepared with the above ingredients with the substitution of mango pulp instead of the ground pistachio nuts!

*Evaporated Milk is milk, which is boiled and reduced to half the quantity available in ready to use cans
**Condensed Milk is Evaporated Milk with the sweetness in it

      Hi Sangeetha
      Thank you for taking the time to pen down your response to the kulfi receipe – Since you live overseas a combination of the pista essence which is available in most Indian grocery stores and a green food colouring (just a few drops of each) would do the job. I live in Australia and bring my stock of the pista elaichi essence from India – Milkie – Elaichi Pista Essence. Please let me know how you went with it!

    Hi Shoba,

    Yes tried the kulfi recipe for this Tamil New Year’s Day..it was a great hit at home and shared some with my friends too..they all loved it..thanks for the good recipe.

    I searched for pista essence in indian grocery store and could not get it..so I got ice cream essence instead and used just a drop of it . And also I did not want to use food color so I used crushed saffron to get nice yellow color naturally and finally I added lots of pulsed almonds and pista nuts in the mixture to give nutty texture to it…tasted yummy ….
