Ragi Dosa

This healthy tasty and delicious dish is prepared by the wonder grain, Ragi 
Before Rice, Ragi was one of the traditional staple food  consumed by people – When Rice took over,  Ragi was not a popular staple food any more!
Now  this super grain has come back with a great vengeance as it helps in controlling diabetes, reduces the blood sugar and loaded with vitamins – vitamin C and D to name a few!
Ragi Flour is readily available too in the grocery stores, which is handy in the preparation of dishes!!
it is best consumed in the morning for the goodness to work through your body and have a healthy start to the end of the day!!!

This recipe requires a bit of planning – soaking and allowing it to ferment is important for the batter to be fluffy and tasty!!
Believe me it is all worth the effort!!

Ingredients to make approximately 10 Dosas

1 cup Whole Grain Ragi
¼ Cup Urad Dal
1 Tsp Methi seeds
2 Green Chillies
Few Fresh Coriander Leaves
¼ piece fresh ginger

Salt to taste

Preparation

Soak the grain, dal  together with the methi seeds for 4-5 hours
Wash and drain the water
Grind the above with the green chillies, ginger and coriander leaves into a smooth batter
Add the salt
Allow it to ferment overnight or for 7-8 hours during the day – Mix the batter thoroughly!
The batter is fluffy and ready!!

To make the dosa

Heat a flat pan on medium heat.  Scoop a ladle of the batter
Pour it in the centre and work your way around in concentric circles, spreading the batter evenly on the pan.
When the bottom of the dosa turns golden brown, flip it to the other side for a minute or less –
The Dosa is ready to be eaten

Note:  This dish can be served with Sambhar, Chutney Powder or Chutney
