Ingredients to make 6 serves
1 Bunch Freshly chopped Spinach (Palak)
2 med sized Potatoes (chopped into cubes)
2 Tablespoons Fresh Cream
4 Tbs Oil
1 Large Onion (chopped)
1 Inch piece Fresh Ginger
2 Pods Garlic
2 Small Green Chillies
1 Tsp Cumin Seeds
1 pinch Turmeric
1 Tsp Red Chilli Powder
1 Tsp Coriander Powder
1 Tsp Garamasala Powder
1-2 Tsp Salt
A few Fresh Coriander Leaves (finely chopped)
Preparation of Aloo Palak
Cook the chopped spinach in the microwave with a tablespoon of water for about 6 minutes and keep aside.
Cook the potatoes in the microwave for 6 minutes with a tablespoon of water
Add two tablespoons of the oil in a heated pan.
Add the chopped onion,, turmeric, ginger , garlic and the green chillies and fry for about 3 minutes.
Add the red chilli, coriander and garamasala powder, the cooked spinach and fry for about 3 minutes and keep aside to cool.
Grind the above into a soft mixture. In a pan add the remainder of the oil, when heated add the ground mixture and the fresh cream.
Fold through the cubes of cooked potatoes gently into the mixture and cook on medium flame for 3-4 minutes.
Garnish with finely chopped fresh coriander leaves
Note: Paneer chopped into cubes can be substituted for the potatoes. The paneer cubes can be folded through the spinach mixture.

I am new to your website and I live in New York City. During this week, I made the Aloo Palak from your recipe. It was delicious and I enjoyed preparing all the herbs and spices as well. It has always been one of my favorite dishes but I never thought I could prepare it on my own. Thanks for a great recipe. I am going to try the the cauliflower curry next!
