Another amazing, delicious, sumptuous treat with the left over idli or Dosa batter!!!!!???
The batter is prepared to make Idlis on the first day, Plain Dosa or Masala Dosa the next day, Uthappams or Kuzhi Paniyarams on the following days!!!
This luscious treat is called Uthappam.
Ingredients to make about 15 Uthappams
2 Cups of left over Idli or Dosa Batter OR
2 Cups Par Boiled Rice or Raw Rice
¼ Cup Whole Urad Dal
6 Cups Water (to soak)
2-3 Tsp. Salt
Ingredients to add to the batter to make the Uthappams
1 Medium Sized Onion (finely chopped)
1-2 Green Chillies (finely chopped)
Few Finely chopped coriander leaves
½ Tsp Cumin Seeds (Optional)
1 Cup Oil for Shallow Frying
Preparation of the Batter
Wash the Rice and Urad Dal thoroughly and soak it in the water
Soak the above for 5-6 hours
Drain the water leaving quarter of a cup of water and grind it into a soft batter.
Add the salt and cover it with a lid and allow it to ferment during the day for 6-7 hours or overnight
The batter will rise and is ready for the preparation of the dish
Preparation of the Uthappams
Add the above ingredients to the fermented batter and mix thoroughly
Place a deep heavy based pan on the stove on high till the pan is heated.
Reduce the flame a bit and the pan is ready for making the Uthappams
Add a couple of teaspoons of oil
Scoop a ladle of the batter and pour it in the centre (about 10 cms in diameter)
Leave it untouched on a medium flame for 2-3 minutes
The Uthappam is ready to be gently turned on the other side when you can see it turning crispy at the bottom and you are able to lift the Uthappam.
With a flat ladle, gently flip the Uthappam to the other side and let it cook till slightly golden brown
Note: Uthappams can be served with any hot chutney, coconut chutney, chutney powder or sambhar.
I prefer to make enough batter for the week to make idlis for a couple of days, dosas and Uthappams the following days!!
